Food For Thought: Cauliflower Al Pastor Tacos

I recently tried this new recipe: Cauliflower Al Pastor Tacos. It was delicious, and a recipe we'll be using again and again. It is not really a protein alternative, but the cauliflower is delicious in this application, and whene served with pinto beans on the side -- which are a wonderful protein -- , it results in a well balanced and yummy meal.

The recipe is from a young woman named Tieghan, and the name of her site is "Half Baked Harvest". I've tried several of her recipes and found them to be very, very tasty. Here is the link to the recipe -- minus the parenthesis:
