Food For Thought: Pasta w/Vegetables & Soy Almond Butter

In my quest to prepare balanced meals that include protein alternatives to meat, or to serve with smaller portions of meat, I found a very yummy recipe. Because of sodium restrictions for both my husband and me, we have been trying various low or no sodium condiments -- such as ketchup, peanut butter, etc. We also purchased an Almond Butter that has no added sodium or sugar by Maranatha Foods. On their site, they have some recipes listed and I was drawn to one for Pasta & Stir Fry Vegetables with Soy Almond Butter Sauce. It is now one of my husband's favorites, and I like the Soy Almond Butter Sauce so much I use it as a condiment on other food dishes.

As with most recipes, I changed it up a bit: I reduced the amount of Soy Sauce from their suggested 3-4 Tablespoons, to 1.5 Tablespoons Low Sodium Soy Sauce. We also usually use unsalted chicken stock instead of vegetable stock. I also add a whole lot more vegetables to the stir fry than what their recipe calls for: carrots, peas, broccoli, radishes, beans, cabbage, onions, celery -- whatever I have on hand. We've also switched out the type of pasta: we opt for a whole grain or whole wheat pasta, and have even tried new types of pastas that incorporate beans or lentils, even a soy bean and/or Edamame pasta sold at ALDI by Simply Nature brand that has a whopping 26 grams of protein per 2 oz. serving. If using a traditional pasta, we usually serve with a small portion of chicken as a side dish. But, if we go with a very high protein pasta alternative, we just forgo the meat. The almond butter, itself, has protein in it.
