Good 4 U Pancakes

1 c. oatmeal - not instant.
1 c. cottage cheese
2 ripe bananas
1 tsp. vanilla
Cinnamon - a big sprinkle
2 tbsp. Splenda
3 eggs

Blend in a blender. Add a little milk or soymilk if you need to to make it blend. Not much.

Add half cup pecans if you like. Blend a little more.

Makes great pancakes and you can't taste the cottage cheese. And really there is no oil or white flour.

This is derived from Bill Phillips Eating for Life - Great book. But, I always change the recipes.


Guacamole

Use the black (dark green) avocados with the bumps - not the smooth ones.

Three avocados
Juice from half a lemon
Finely chopped onion (probably 2 tbsp. - but I don't measure)
2-3 tbsp. Helmann's or other real mayonnaise
2-3 tbsp. Miracle whip. (You can use all Miracle Whip, but not vice versa)
2-3 tbsp. salsa

Use a mixer to mix it smooth.

Put the pit in it to keep it from turning dark. All measurements are approximate. After you taste it the first time, you can figure out the adjustments you want to make. It is pretty forgiving.


Muffins - Zucchini and/or Anything

3-4 C. coarsely shredded zucchini
Orrrr 3-4 cups blended bananas
Orrrr 4 cups blended anything reasonable from the fridge.
(I used a mixture of pears, apples and carrots.)
(If you are blending, you can add the eggs, milk and oil to the blender so it works better, but allow for the extra volume when measuring.)
1 ¼ c. vegetable oil + 2 tbsp. soy or other milk
Orrr 1 cup oil + ½ cup buttermilk
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tbsp. cinnamon
1 tbsp. vanilla
4 eggs
2.5 c. sugar
3 cups flour
1 cup chopped nuts

Mix it all up and then, if you are doing anything muffins (the mixed fruit muffins) add raisins and Craisins (dried cranberries) - up to 1 c. total.

Preheat oven to 325°. If you have convection, please use it. 25 min for convection. Muffins should be evenly golden brown and should bounce back when poked. Or use a toothpick to see if done.

PAM the muffin tins, even if they are non-stick. If you will soak the muffin tins right after you remove the muffins and then put flat on the top rack of your dishwasher, they should come clean.

Makes 3-4 dozen muffins of the old-fashioned sizes.
